Healthy Black Bean Brownies

Healthy, delicious black bean brownies, packed with protein, and chocolate. The perfect treat without any guilt.

Ingredients

Brownies

  • 1 15 oz. can drained and rinsed black bean brownies
  • 3 large eggs
  • 1/3 cup melted coconut oil
  • 1/4 cup cocoa powder
  • 1/8 tsp. salt
  • 1 tsp. vanilla extract
  • 1/3 cup pure maple syrup or honey
  • 1/2 cup gluten free chocolate chips
  • 1/2 tsp. baking powder
  • 3 tbs. gluten free flour

Toppings

  • 1/2 cup walnuts (optional)
  • 1/4-1/2 cup chocolate chips

Instructions 

  • Preheat the oven to 350 degrees
  • Drain and rinse the beans
  • In a food processor or blender, blend the ingredients, except the chocolate chips
  • Transfer the batter to an 8 x 8 pan, and stir in the chocolate chips
  • Top with additional chocolate chips and walnuts if desired
  • Bake for 30-35 minutes
  • Let cool and cut into 12 squares
